This is a simple recipe that is packed with flavor. You can use almost any white fish for this dish. Comes together really quickly for an easy, healthy, and delicious meal!
Tomato Orange Swai
1 (4 oz) Swai filet
3 tablespoons chopped onion
1/4 large orange (2 large wedges), chopped
1 teaspoon orange zest
5 cherry tomatoes, halved
Ginger
Salt and pepper
1. Preheat a large skillet over medium heat. Spray with cooking spray. Add the onion and cook until soft (about 3-4 minutes).
2. Add the tomatoes, oranges, orange zest, salt, pepper, and ginger. Add spices to taste; I used a dash each of salt and pepper and a few dashes of the ginger. Cook together for about 10 minutes.
3. Season the swai with salt and pepper. Add to the pan with the sauce and cook until the fish is cooked through (it will flake easily with a fork).

Hummus Baked Fish
Easiest recipe ever. If you like hummus, this is a must try!
Hummus Baked Fish
Ingredients:
- 4 fish filets (I used Swai, but any white fish or even salmon would work here)
- Hummus (use your favorite!)
1. Preheat your oven to 375 F.
2. Line a baking sheet with foil (easier clean-up!). Coat with cooking spray.
3. Spoon hummus evenly over fish. Bake for about 12-15 minutes or until fish flakes easily with a fork (thicker cuts if fish will take longer).

Mercury Levels in Fish
I often get questions about the safety of eating fish several times a week. So when I came across the National Resources Defense Council (www.nrdc.org), chart tht ranks fish based in their level of mercury, I thought it would be great to share. According to the NRDC, most mercury pollution is from coal-fired power plants and other industrial processes. Mercury is harmful to humans, especially pregnant women and children. When mercury enters the body, it acts as a neurotoxin, which means it disrupts our nervous system.
Do not let the fear of mercury steer you away from fish, or you'll be missing out on a great source of protein and omega-3's. Just be smart about your choices.

Cauliflower: Pizza'd, Riced, and Bun'd
I had leftover cauliflower from my pizza experiment, so I decided to make Cauliflower Fried Rice! It’s amazing how much it really resembled the texture of rice- and it was SO easy. I grated my cauliflower in my Ninja. Next, I beat a whole egg and “fried” it on a pan coated with cooking spray. I put the egg aside then sautéed some baby bell peppers, onion,garlic, and lots of grated ginger. Once the veggies were soft, I added some chopped steamed broccoli. Finally, I added the cauliflower “rice” and let it cook for a few minutes. Splashed the whole thing with some sake and Bragg’s Liquid Aminos (could use soy sauce), then sprinkled it with a little stevia and BAM- Cauliflower fried rice!!!

Peanut Butter Cinnamon Cream Pancakes
I decided to make some hearty oatmeal pancakes this morning and these came out SO YUM. I'm dedicating them to those of you who still have not bought coconut flour (you can find it in the natural food section of your grocery store or buy it online-I order from Iherb.com. Use ZSG766 discount code to get money off your first order!) and still want to make yummy protein pancakes :).
Most protein pancakes recipes that are made with oats call for a larger serving size than I used. Use more if you like, I choose what fit my macros best.
These were perfectly peanut-buttery and delicious! Feel free to use any protein powder flavors you like to switch it up!
Peanut Butter Cinnamon Cream Protein Pancakes
Ingredients:
3 tablespoons Cellucor Peanut Butter Marshmallow (or any flavor you like)
3 tablespoons cottage cheese
3 tablespoons quick oats
Most protein pancakes recipes that are made with oats call for a larger serving size than I used. Use more if you like, I choose what fit my macros best.
These were perfectly peanut-buttery and delicious! Feel free to use any protein powder flavors you like to switch it up!

3 tablespoons cottage cheese
3 tablespoons quick oats
3 tablespoons egg whites
1/2 teaspoon baking powder
1 teaspoon vanilla
Truvia and cinnamon to taste
1. Blend together all ingredients. Batter should be thick.
2. Cook your pancakes.
For the filling, I just mixed together cinnamon + Truvia + Greek yogurt + PB2, thinned out with a little water to dissolve the PB2. Layer it between your pancakes and eat!!
Nutrition Facts for the Pancakes (filling not included): 221 calories, 3 g Fat, 14.6 g CHO, 1.5 g Fiber, 33 g Pro!
On a side note, I am now officially a Sriracha addict!!! Packs HUGE flavor. I used some today in my new favorite egg white salad:
How do you make it? Couldn't be easier. Take the whites of a few hard-boiled eggs and throw them in a food processor/Magic Bullet/Ninja with some Sriracha and Light Silken Tofu (replaces the mayo- you won't miss it!). Wrapped my egg white salad up in a cute little nori wrap :).
I continued my obsession at dinner tonight:
This is Barramundi seasoned with Mrs. Dash Southwestern Blend, onion powder, and lemon juice. Baked it at 350 (about 4 minutes each side) then finished it off under the broiler for about a minute. Topped it with Greek yogurt, avocado and Sriracha!!! Party in my mouth :) Served with roasted paprika butternut squash with toasted pumpkin seeds, and roasted asparagus. My meals will never be the same again!!
